Ingredients:
4 eggs
1 (3 oz.) package instant lemon pudding
mix 1/3 C. vegetable oil
1 (18.25 oz.) package lemon cake mix
3/4 C. water
1/2 C. lemon juice
3 C. sifted confectioners' sugar
1/4 C. confectioners' sugar for dusting
Directions:
- Set your oven to 350 degrees F before doing anything else and grease and flour a bundt pan.
- In a bowl, add the eggs and beat till thick.
- Add the cake mix, pudding mix, oil and water and with an electric mixer, beat on medium speed for about 5 minutes.
- Transfer the mixture into the prepared pan and cook in the oven for about 50 minutes or till a toothpick inserted in the center comes out clean.
- Meanwhile for glaze in a mix together the 3 C. of the confectioner's sugar and lemon juice and heat till boiling.
- Pour the hot glaze over the hot cake and keep aside for about 1 hour to cool.
- Carefully, invert the cake over the serving plate.
- Serve with a dusting of the confectioner's sugar
